Restaurant Style Matar Paneer / Matar Paneer ki Sabji is a tasty, creamy and rich North Indian curry recipe prepared from paneer cubes and green peas. This tasty Indian dish is one of the most popular dishes from the North Indian cuisine.
This is an exotic incredibly flavorful paneer curry. It is cooked in a tomato and onion based sauce with other Indian spices. This gravy based curry recipe can be served with rice, roti, chapati or any Indian flat breads. Matar Paneer ki Sabji is very easy and simple to make with basic ingredients easily available in most of the Indian kitchens.
Every household has its own version of making it and adjusted according to your needs. This is most commonly made during the winter season in most Punjabi households, when fresh green peas are available in abundance.
Creamy and luscious Matar Paneer is one of the most popular paneer dishes. This dish is made with soft paneer and sweet green peas, which is simmered together in a luscious, irresistibly tasty gravy made with tomatoes, onions and spices. Directions
If you are using fresh green peas, boil them in salted water for 7-8 minutes or until tender; drain them. If you are using frozen green peas, thaw them before using.
Keep all the ingredients ready including the paneer and green peas.
In a pan / kadai, heat 2-3 tbsp of oil. Fry the paneer cubes in medium high flame. Do not fry the paneer for too long, as they will turn dense and hard.
Immediately, transfer the fried paneer to water, this will retain the softness of the paneer.
Now we will make the masala paste. In a blender jar, add all the ingredients under "For Grinding" and blend it to a smooth paste and keep aside.
In the same kadai, add 1 tsp cumin seeds and 1 bay leaf.
Keeping the flame low, add the ground masala paste, and mix well. Continue to sauté until the paste thickens.
Cover the pan and cook until the oil seperates.
Now add turmeric powder, Kashmiri chili powder, coriander powder , poppy seeds or khus khus and mix well. Sauté until spices turn aromatic.
For extra flavor, at this stage add 2 tsp of ghee and give it a quick stir. Add in the green peas and stir well.
Now add around 1 cup of water, and salt and mix well until a smooth gravy is attained. Cover and cook for 10 mins, until matar is cooked well.
Now its time to add our fried paneer pieces and mix it gently.
Finally add, 1 tsp of kasuri methi, 1 tsp of garam masala and combine it well.
Cover and cook for another 5 mins for the flavors to set in. Garnish with some fresh coriander leaves.

Conclusion
While sautéing the masala paste tends to splutter, cover the pan partly with a lid until the spluttering stops. If you want creamier curry, add some fresh cream.
